Juice Concentrate is made from freshly-picked grapes. The grapes are boiled at a very low vacuum to reduce water content. Sulfites are then added to preserve freshness and inhibit microbes, and the concentrate is canned.
46 fluid ounces of concentrate will produce approximately 2 1/2 gallons of finished wine. Recipe on the back of the can has a recipe for 5 gallons of wine, using 2 cans. Additional ingredients required include white granular sugar, yeast nutrient, bentonite, tartaric acid, and wine yeast. Tannin can optionally be added.
