Danstar's Belle Saison is an ale yeast of Belgian origin selected for its ability to produce great Saison-style beer. This yeast features a quick start and vigorous fermentation, which can be completed in 5 days above 17°C (63°F). High attenuation and high alcohol tolerance. It has a low flocculation rate, but settling can be promoted by cooling after fermentation and using fining agents.
For saison beers, cooling is not normally used during fermentation; allow the temperature to free rise. Aroma is fruity, spicy, and peppery, and does not display undesirable odors when properly handled.
